ingredients

500g prawns, peeled with tails on

For the dry rub 

1/2 tsp sea salt

1/2 tsp ground black pepper

1 tsp cayenne pepper

1 tsp garlic powder

1 tsp dried parsley

1 tsp dried coriander

1 pinch dried red chilli (optional)

method

1) Mix the ingredients for the dry rub together and set to one side.

2) Pat the prawns dry and place into a bowl. Add the dry rub bit by bit and rub into the prawns. You want them to be nicely coated so that you can still see the flesh of the prawn rather than thickly spread.

3) Place the prawns onto the barbecue (they can also be cooked indoors) where they should take no longer than 5 minutes to cook through. Turn them during cooking so that each side is nicely charred.

4) Enjoy as part of a barbecue spread or on their own as a starter.
